Smiths Gin Cocktail Masterclass

Join us and discover all of the secrets of our expertly hand-crafted cocktails. Our Mixologists, Robert Flight (Smiths Restaurants) and Zane Chiswell (Haymans Gin) will guide you and your friends through the tricks of the trade and the complexities of the gin world. You will get the chance to shake, mix and muddle some of our signature cocktails and most importantly enjoy the fruits of your labour whilst enjoying specially paired food plates.

Kings of Roses – Cocktail of the Week

Ingredients

50ml Four Roses bourbon

25ml The King’s Ginger Liqueur

50ml Fresh Orange Juice

25ml Fresh Lemon Juice

Method

Add all ingredients to a shaker with ice (for additional sweetness, add a dash of gingerbread syrup), shake and double strain into a small Champagne Coupe glass.

Recipe of the Month

Tiger Prawn and Monkfish Fillets

Ingredients

6 x Medium Tiger Prawns
6 x 60g Monkfish Fillets

For the Dressing:

50ml Light Soy Sauce
25ml Dry Sherry
5ml Sesame Oil
10ml Water
25ml Plum Sauce
10ml Peanut Oil

For the Garnish:

1 inch Fresh Root Ginger cut finely
½ Bunch Shredded Spring Onion
1 x Finely Chopped Chilli

Method

For the dressing simply whisk all of the ingredients together. Heat a medium non-stick pan and add 1 tablespoon of vegetable oil. Season the monkfish and the prawns with sea salt and ground white pepper. Pat dry on kitchen towel. Cook for 2-3 minutes on each side then leave to rest for 2 minutes while you prepare the garnish. Heat 4 tablespoons of vegetable oil until smoking, remove from the heat. Add spring onions, ginger and chilli and spoon over the fish along with the dressing.

Cancer Research UK

In aid of Cancer Research UK, Smith’s hosted a charity event raising a grand total of £1,345.

Organised by Charmain Taverner and Karen Lane, selling various Christmas decorations and selling raffle tickets that included some amazing prizes from local businesses! Thanks to all involved.
